A Fun Super Bowl Snack

Yeah, I switched platforms from MailChimp to Beehiiv to post my newsletters. For various reasons. The learning curve is pretty steep for me, being pretty non-techy, but my son Kev has been immensely helpful getting me started.

Side note: The above video is from a Brian Regan comedy routine. His clean comedy is top notch, and I recommend checking him out on YouTube when you need a good laugh.

But let’s get down to the meat of this article. No pun was intended, but what the heck, I am going to run with it. As you will later see.

Sabotaging Days & Events

They just keep coming. It is so hard to get even a 30-day block of time where there is not going to be a social event or holiday landmine that will threaten your intentions to stick with your plans to get more healthy and fit.

And one is just around the corner, in two more days, in fact. THE SUPER BOWL.

But I have a fun food idea you may want to try.

Mini Meatzas for the Win!

Meatzas are like pizzas, except the base (crust) is meat, not bread. And then like pizza, you have various toppings. Super simple, super delicious, super low carb, super nutritious, super for Super Bowl Sunday. (Click here for pdf)

Ingredients needed:
  • Ground meat - Beef, Turkey, or Chicken (Pork may work; I haven’t tried it yet.) You could mix in 1 egg per pound of meat, but you can get good results without it.

  • Toppings (Choose a few from the list below.)

    • Pepperoni, sausage, ham

    • Cheese (Cow, Sheep, Goat, Vegan)

    • Olives, mushrooms, onions

    • Arugula, basil

    • Pineapple

Instructions:
  1. Make about 20-24 meatballs out of the ground meat. Set them apart from each other on a large cookie sheet with edges and smash pretty flat with the bottom of a glass.

  2. Bake in the oven at 350-375 degrees until done. Not very long. Maybe 10-15 minutes.(These can even be made ahead and frozen.)

  3. Prepare toppings. For a gathering it would be fun to have more options. People could make their own or you could make a selection.

  4. Add toppings to cooked “crusts” in whatever order seems best.

  5. Stick the cookie sheet back in the oven, and depending on your mood, bake for a short amount of time at 400-450 degrees, or broil if you are super hungry. The goal is to get that done look.

  6. Serve & enjoy. (BTW, leftovers are delicious, even cold like regular pizza.)
